Ingredients:

- 2 celery stalks, chopped

- 1 can (14 oz) diced tomatoes

- 6 cups vegetable or chicken broth

- 1 teaspoon ground cumin

- 1/2 teaspoon ground coriander

- 1/2 teaspoon paprika

- Salt and pepper to taste

Instructions:


1. Rinse and Prepare Lentils:

   - Rinse the dried lentils under cold water, and pick out any small stones or debris.


2. Sauté Vegetables:

   - In a large pot, heat a bit of olive oil over medium heat. Add the chopped onion, carrots, and celery, and sauté until they start to soften, about 5 minutes.


3. Add Spices and Garlic:

   - Stir in the minced garlic, cumin, coriander, and paprika. Sauté for another minute until the spices become fragrant.


4. Add Lentils and Broth:

   - Add the rinsed lentils, canned diced tomatoes, and vegetable or chicken broth to the pot. Bring everything to a boil.
