Ingredients:

- 1 cup quinoa

- 2 cups water

- 1 can (15 oz) of black beans, rinsed and drained

- 1 red bell pepper, diced

- 1 cucumber, diced

- 1 cup cherry tomatoes, halved

- 1/2 red onion, finely chopped

- 1/4 cup fresh cilantro or parsley, chopped (optional)

- Salt and pepper to taste


For the Vinaigrette Dressing:


- 1/4 cup olive oil

- 2 tablespoons red wine vinegar or lemon juice

- 1 teaspoon Dijon mustard

- 1 clove garlic, minced

- Salt and pepper to taste


Instructions:


1. Start by rinsing the quinoa under cold water to remove any bitterness. In a medium saucepan, combine the quinoa and water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is cooked and the water is absorbed. Fluff the quinoa with a fork and allow it to cool.


2. In a large salad bowl, combine the cooked and cooled quinoa with the black beans, diced red bell pepper, cucumber, cherry tomatoes, and chopped red onion.


3. To make the vinaigrette dressing, whisk together the olive oil, red wine vinegar or lemon juice, Dijon mustard, minced garlic, salt, and pepper.


4. Pour the dressing over the salad and toss everything together until well combined.


5. If desired, garnish the salad with fresh cilantro or parsley.


6. Taste the salad and adjust the seasoning, adding more salt and pepper or extra dressing if needed.


7. Chill the quinoa salad in the refrigerator for at least an hour before serving, allowing the flavors to meld.
